This piece represents the animal's kidney and is part of the offal family. A beautiful dark red-brown color and rich in iron, beef kidney has a fairly pronounced flavor. Once defrosted, it should be cooked quickly. But before cooking, it is important to remove the transparent membrane that surrounds it, as well as the sinewy parts and the fat in the center which may smell of urine. For maximum finesse, sear the kidney then braise it over low heat in a sauce (e.g. red wine, cream and Meaux mustard).
